I read Dr. Michael Gregor’s new book “How not to Die” I got it at the library and later bought it at costco for $17.00. If your very interested in your health and have a few health problems, this book is excellent. After reading the book I decided to do an experiment on myself. I had to get a few things together first like, Fruits and vegetables.
It was October 2017 when I decided to go all in on a plant-based diet. I’m like a lot of people my age going to the doctor and getting warnings to watch my cholesterol. My triglycerides are up. So rather than struggling to watch what I eat, I decided to change what I eat and see what would happen. To my surprise my Doctor was all for it and gave me the go ahead.
For the last twenty years I have had a smoothie for breakfast. I started this after I had a stroke at 50. The smoothie always contained, Flax meal, banana, strawberries and blueberries, spinach, kale, beet, and sometimes I’d throw in a carrot or even some celery. Top it off with soy or almond milk and some water. My vitamix works beautifully in turning veggies into smoothies. I’ve had my Vitamix for over 20 years without replacing it. So, breakfast is covered.
Honestly, I,m not a cook. Being retired I just would wing it for lunch like, have a hot dog or a sandwich. I was tired all the time. This stuff was weighing me down now that I look back.
I had to get some help in what to cook and found a few websites that had recipes for whole food plant-based eating. These are the best I could find so far.
Clean food dirty girl Signed up for her weekly recipes. Join her facebook page, it’s quite funny most of the time. Her recipes are delicious and sometimes somewhat complicated. I say that because I never considered myself a great cook. But you will learn to cook a whole new way if you are up to the challenge. She also has some easy recipes for free. Try the pineapple fried rice. I love it!

After about 12 weeks of eating plant-based food I had my blood tested to see if There was any improvement. And my triglycerides went down along with my cholesterol and my doctor put me on half medication for high blood pressure. I feel I could do this for the rest of my life. Within a week I got a ton of energy and would love to stay like this.I also lost 9lbs. Just enough to get rid of my Tummy. I am 5’6″ and now weigh 132 lbs .This is a good weight for me. I never feel bloated anymore. The arthritis has also calmed down and my knee has never bothered me since I started. The more I read it seems like people who start eating this way go back to a more natural weight.
If you ever decide to try this, talk to your doctor first and it’s a must to take vitamin B12 and Vitamin D every day on a plant based diet.
